Two Healthy and Refreshing Summer Iced Tea Recipes

I love the summer. I don't know what the weather's like today where you are, but it's SO hot here in London. It's almost 80 degrees outside and I'm definitely feeling it.

Anyway, enough about me. If you could do with a little hydration in this crazy heat, but are bored of water and feel like something sweet...don't reach for the cola, because I've got just the thing. 

These super simple iced tea recipes use just five or six ingredients each, are extremely satisfying and will cool you down in no time.

Each recipe makes about 8 servings. Perfect for summer parties and BBQs or just keeping in the fridge for yourself!

Refreshing Peach and Mint Iced Tea



You will need:
2 litres (approx 8 cups) water
7 tea bags
4 ripe, juicy peaches
1 large sprig of fresh mint
Natural sweetener such as stevia to taste (optional)

Method:
1. Boil the water and steep the tea bags in a heatproof jug or pitcher for 10-15 minutes.
2. Meanwhile, slice the peaches.
3. When the tea is brewed, remove the tea bags and add the peaches, mint and stevia to the water. Stir.
4. Leave to cool at room temperature before refrigerating.
5. Pour over ice to serve.


Detoxing Iced Green Tea



You will need:
2 litres water
green tea bags
12 strawberries
1 cucumber
Half a lemon and the juice of the other half
Honey or stevia to sweeten (optional)

Method:
1. Boil the water and steep the green tea bags in a heatproof pitcher for 10 minutes.
2. Meanwhile, cut the strawberries into halves, slice the lemon and cut about 15 slices of cucumber.
3. When the tea is brewed, remove the tea bags and add the strawberries, cucumber slices, lemon slices, lemon juice and honey or stevia to the water. Stir.
4. Leave to cool at room temperature before refrigerating.
5. Pour over ice to serve.
