Simple and Healthy Two-Ingredient Pancakes

These pancakes are an absolute winner. They're free from gluten, flour, dairy, salt and refined sugar, require just two ingredients and are actually good for you! Oh, and they're also ridiculously simple to make.


This recipe serves one and makes about three small pancakes. To cook for two people, just double the quantity of both ingredients!

You will need:
2 eggs
1 banana
That's it!

Method:
1. Mash the banana (really well) in a bowl.
2. Crack the eggs into the banana bowl and whisk thoroughly. You could even put the mixture into a blender at this point to mix it even better.
3. On a medium heat, spray your frying pan with a non-stick cooking spray, ladle the mixture into the pan (you'll need to do this in batches) and cook like a normal pancake.
4. When the pancake is cooked on one side, flip it over and cook on the other side.
5. Serve with anything you like. I love to eat them with honey and fresh berries.

These pancakes make a great breakfast. They're full of protein and carbohydrate and are surprisingly filling. They taste like regular pancakes (albeit with a subtle banana flavour) and you can even customise them to suit your taste. You could add in:

A pinch of baking powder to make them fluffier
Some cinnamon to make them even more delicious
A scoop of unflavoured protein powder if you'll be hitting the gym
